1 lb. Italian Sausage or chicken sausage
1 tsp Olive Oil optional
1/2 Red Onion diced
3 cloves Garlic finely chopped
2 stalks Celery diced
1 cup uncooked Orzo Pasta
6 cups Reduced Sodium Chicken Broth
1 15-oz can No Salt Added Diced Tomatoes keep juice
1 tsp Dried Italian Seasoning
1 tsp Kosher Salt
Black Pepper to taste

Directions:
In a 4 quart pot, add olive oil and sausage. Brown sausage breaking it into small pieces;
Remove sausage from pot and drain fat leaving 2 tbsp to saute veggies.
Add onion, garlic and celery. Sauté until tender (3-4 min).
Add dry orzo; sauté until toasted and fragrant (about 2-3 min); stirring as needed.
IAdd chicken broth, diced tomatoes with juice, Italian seasoning, salt, pepper and browned sausage.
Bring soup just to boil; then reduce heat to medium-low and simmer until orzo is cooked to your liking (10-15 min); serve warm.

And 1 cup more broth for a thinner soup
Add-ins: sauteed diced carrots or 1 cup fresh spinach chopped
