1 large onion, chopped
1-2 clove garlic, chopped
stick butter or 2-3 T olive oil
2-3 slices of diced bacon
4 cups cubed chicken
4 cups chicken broth
2-3 cans of white beans (Great Northern or navy), drained
1 can Rotel tomatoes
2 small cans of chopped green chilies
1 T dried basil
1 tsp cilantro fresh or dried (opt)
1-2 T chili seasonings
1 T cumin
1 tsp cayenne pepper or red pepper flakes, to taste
tsp ground cloves + 1 tsp Worchestershire sauce (opt)
2 T lime juice
2 cups canned or frozen corn (opt)

Directions:
Directions:
In a large, heavy soup pot, brown the bacon in the olive oil and add the onion and garlic-sauce til tender. Add the chicken and cook until no longer pink.
Add the broth, beans, corn, chilies and tomatoes and spices to taste.
Simmer x 30-60 minutes. Salt and pepper to taste.
Serve with toppings such as green onions, chopped tomatoes, shredded cheese, sour cream, tortilla strips, bacon crumbles, lime wedges.

NSPC's women's group made soups to sell each month. It was called the "In and Out" Sunday-bring in food for the food pantry and take home pints of soup or chili. This was a very successful program that raised a lot of money for our church projects.
A similar soup was Chicken tortilla Soup-it had more broth (chicken and beef), tomatoes, onions and a can of cream of chicken soup but no beans or corn.
