2 cans of white beans drained
large bunch of celery
2 cans of chicken broth
1 small onion chopped
6 T olive oil
1 garlic clove

Directions:
Directions:
Chop celery in small pieces including leaves.
add to pot with oil and onions, garlic and simmer covered
until tender. Add chicken broth and beans and
simmer until all blended together. Serve with crusty bread.

When we visited a cousin and his garden in upstate New York, he mentioned he had
lots of celery and didn't know if it would go to waste. My Mom suggested cooking
it with beans and chicken broth. It was a staple in our household ever since.
Although it sounds bland, it is surprisingly tasty. Try it!
