6 mint leaves
¾ ounce (1 1/2 tablespoons) lime juice
1 ounce (2 tablespoons) simple syrup
1 ½ ounces (3 tablespoons) amber rum (like Plantation 5 star)
1 or 2 dashes Angostura bitters
2 ounces dry sparkling wine

Directions:

Lightly muddle mint in a shaker with lime juice. Add simple syrup, rum, and bitters. Add a handful of ice. Shake until chilled. Strain into a glass and top with sparkling wine. Garnish with a small mint leaf.
