1 Small Green Cabbage, chopped
1 Bell Pepper Chopped, can use green, red or yellow
1 large Jalapeño, chopped
4 Radishes, sliced and halved
1 large Carrot, peeled and grated
1 Red Apple, Cored and Sliced thin
1/2 Bunch Cilantro, chopped, reserve 1/4 cup for topping
4 Green Onions, chopped whites and green parts
1 Small Can Mandarin Orange Slices, drained
4 Tbsp Pepitas

Dressing:
1 Tbsp Salt
1 tsp Cumin
1 Lemon, juiced
1/4-1/2 cup Olive Oil
1/2 tsp Dijon Mustard, just enough to emulsify the dressing
2 Cloves Garlic, minced



Directions:
Directions:
Put all the Salad ingredients into a large mixing bowl.

Put lemon juice into a separate mixing bowl. Start out with 1/4 cup Juice. Whisk in salt and cumin. Add mustard and garlic. Whisk in oil slowly. Taste periodically, add more juice and oil to make the dressing to your liking.

Don’t pour dressing on salad until you are ready to serve. Add chopped cilantro and pepitas. Add your favourite fresh herbs if you want.

This is a good crunchy summer salad. Substitute pears for apple or walnuts for pepitas.
