2 c brown sugar
1 c oil
4 eggs
2 c pumpkin
1 tsp vanilla
2 c flour
1 tsp cinnamon( I use a least 2 tsp)
1 tsp baking soda
1 tsp baking powder
1 tsp salt ( I use 1/2 tsp)

Frosting:

2 oz cream cheese, softened
1 stick butter, softened
1 tsp vanilla
2 c powdered sugar

Directions:
Directions:
Mix sugar, pumpkin together, add oil, mix well, add eggs, mix really well together. Add the vanilla and cinnamon, mix well.
Add flour , soda, powder, and salt. Mix well. Pour into greased 13 x 18 pan. Bake at 350 º for 23 minutes or until done.



Frosting:

Beat cream cheese, butter, and vanilla until completely combined, slowly add powdered sugar, beat until well combined and smooth. Spread on cooled pumpkin bars.

This recipe came Luke's Grandma Betty, she always made them with whole wheat flour that she ground herself, and that's the way I always made them too.
