Ingredients: 3 cups unbleached all-purpose flour, plus additional for kneading 1¼ cups ice water 1½ tsp salt 2 tbs honey 1 tbs olive oil, plus extra for counter ¼ tsp active dry yeast (there is 2¼ tsp in a packet of yeast) cornmeal

Directions:For Dough (Using Stand Mixer): 1. Process flour and yeast in food processor for 2 seconds, until combined. With processor running slowly add ice water and honey; process until dough is just combined and no dry flour remains, about 10 seconds. Let dough rest for 10 minutes.
2. Add oil and salt and process until the dough forms a sticky ball that clears both sides of the bowl, 30 to 60 seconds. Transfer dough to lightly oiled counter and knead for one or two minutes until smooth. Divide into 3 equal pieces. Work with one piece at a time and keep the others covered with a wet towel; tuck ends of dough into center to form a ball Set ball, ends side down, on surface. Rotate gently but firmly against surface to make it tighter land smoother.and place on well-oiled baking pan and coat the top of each ball lightly with oil. Cover with plastic wrap and refrigerate for at least 24 hours and up to 3 days.
3. One hour before cooking, remove dough from refrigerator and let stand at room temperature.
For Pizza: 4. Clean and oil cooking grate. Heat gas grill for about 15 minutes. While grill heats, warm tomato sauce to a simmer over medium heat.
5. Pour ¼ cup oil onto center of rimmed baking sheet. Take one dough ball and coat both sides with oil. Using your finger tips and palms, pat dough out from center, pressing and stretching dough toward the edges of the pan to form a rough 12"x16" evenly thick oval. Using both hand transfer to pizza peel sprinkled with cornmeal and carefully slide onto grill. Flip dough with tongs and after 30 seconds remove from heat with pizza peel.
6. Working quickly, drizzle crust with 1 tbs olive oil and sprinkle with parmesan before adding a spoonful of sauce. Layer toppings onto crust.
7. Return to grill until cheese melts. Serve. |
