Preheat oven 375

8 Ounces uncooked penne rigate pasta
6 ounces of hot turkey Italian sausage (casing removed)
12 ounces zucchini cut into 1/2 inch slices
1 ½ t oregano
1 t. thyme
¼ t. crushed red pepper
3 garlic cloves, minced
Dash of sugar
1 T, red wine vinegar
1 (28 ounces) no salt whole tomatoes
2 T whipping cream
3 ounces mozzarella cheese (about ¾ )
I ounce Parmigiano- (about ¼ CUP)

Cook pasta and drain, set aside
Saute and crumble sausage. Remove from pan
In pan add zucchini cook 3 minutes Add oregano, thyme, crushed pepper, garlic and sugar. Cook for 1 minute, Add vinegar and cook for 30 seconds.
Add crushed tomatoes and simmer for 5 minutes, add the cream
REMOVE FROM HEAT AND ADD, pasta and sausage
STIR ALL TOGETHER SPOON ONE HALF INTO A 11 X 7 DISH
SPRINKLE HALF OF THE CHEESE
TOP WITH THE OTHER HALF OF THE MIXTURE
SPRINKLE THE REMAINING CHEESES
BAKE AT 375 FOR 20 MINUTES OR UNTIL BROWNED AND BUBBLY
