1 envelope yeast
1 cup warm water
3/4 cup sugar
4 tbsp instant potato flakes

Directions:
Directions:
1) Mix in quart size glass jar.
2) Cover loosely. Let stand at room temperature for 24 hours.
3) Put in refrigerator for 3-5 days.
4) Feed starter with 3/4 cup sugar, 3 tbsp potato flakes, and 1 cup of warm water. Stir and keep at room temperature for 8-12 hours.
5) Use 1 cup starter to make bread.
6) Store remaining starter in refrigerator until next feeding.
7) Repeat feeding every 3-5 days. DO NOT go longer than 5 days without feeding.
