2 3/4 cups sifted cake flour
1 1/2 tsp baking powder
1/2 tsp soda
1/2 tsp salt
2 tsp soluble coffee
3/4 cup shortening
2 cups brown sugar, firmly packed
3 eggs
3/4 cup water
1 1/2 tsp vanilla
Walnuts – optional

Directions:
Directions:
1. Sift flour once, measure, and resift twice with the baking powder, soda, coffee and salt.
2. Cream shortening with sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the dry ingredients alternately with the water, beating until smooth after each addition. Add vanilla and blend.
3. Pour into 2 well-greased, 9 inch layer cake pans and bake in 350 F oven for 25-30 minutes, or until done. Remove from oven, remove from pans, cool and frost with sea foam frosting (see seven-minute frosting near end of dessert section); garnish with walnuts or pecans.
