Crust layer:
2 cups flour
1 cup softened butter
1 cup powdered sugar

Lemon Layer:
4 eggs
6 tbsp fresh lemon juice
1 tbsp fresh grated lemon zest
2 cups sugar
1/4 cup flour
1 tsp baking powder

Additional powdered sugar for dusting

Preheat oven to 350º. Lightly grease a 9" x 13" pan, set aside. Cream flour, butter and powdered sugar together. Press into greased pan evenly. Bake for 20 minutes.

While crust is baking, stir together with a whisk the sugar, flour, baking powder and lemon zest until well mixed, making sure the flour is well incorporated into the sugar. In a separate bowl, beat the eggs and add the lemon juice, beat well. Pour the egg mixture into the sugar mixture and whisk until smooth. As soon as the crust comes out of the oven, gently pour the filling over the crust. Return to the oven and bake for 22-25 minutes until just about set, it should jiggle just a little bit in the middle and will set completely as it cools. Allow bars to cool. Dust generously with powdered sugar. Cut into 32 bars.
