2 Heads of Escarole chopped and cleaned thoroughly
2 cans of red kidney beans (drained if you want)
3 T olive oil
2 cloves of garlic

salt, pepper and red pepper flakes to taste


Directions:

In a large pot with lid, heat garlic and oil just to flavor it
and remove garlic and add escarole and beans,
Simmer together with the lid on until all blends
together and serve with crusty Italian bread
