5 cups flour
4 tsp baking powder
4 eggs
1 cup oil
1 cup sugar
1/2 orange - grated
1/2 lemon - grated
1 tsp vanilla

Directions:
1. Preheat oven to 350º

2. Make well with flour and dry ingredients

3. Put the eggs and oil in the middle of the well. Spoon flour into well and add sugar a little at time. Add orange, lemon and vanilla

4. Work dough on floured board. Once dough is ready, cover unused dough with a paper towel to stay moist

5. Roll out dough and with a round tupperware container cut out circles. Put a spoonful of filling in the middle of the circle and pinch two sides together half way in the middle. Then pinch the remaining part of the dough in the middle to meet the closed part. Pinch together those sides to form a "y shape" closing the cookie

6. Brush with egg and sprinkle cinnamon and sugar on the top of the cookie

7. Bake until golden brown - 23 minutes. When towards the end of the baking session and the oven has been on for hours, cook for 22 minutes
