2 # ground beef
1 med. onion, chopped
1- 28 oz. can diced tomatoes
1 pkg. chili seasoning mix
1 T. pepper sauce
2.5 cups cottage cheese
3 cups shredded cheddar or Mexican blend cheese- divided.
4 eggs, lightly beaten
9 corn tortillas (can use flour)

Preheat oven to 350º

Brown meat and onion. Drain hamburger and add tomatoes, seasoning and pepper sauce. Simmer 5 minutes.
In separate bowl, mix eggs, cottage cheese and 2 cups shredded cheese.
Grease a 9x13 pan. Line with 6 tortillas. Cover evenly with meat mixture.
Layer meat with remaining 3 tortillas. Cover with cheese mixture.
Cover the pan with foil and bake 45 minutes. Remove foil and add remaining cheese and bake uncovered for 5-10 minutes to melt cheese. Let stand 5 minutes before cutting.
