STEAK:

3# Beef Flank Steak
2-3 small Zucchini, cut in slices or thin chunks
2 red peppers, cut in large pieces
Mushrooms, onions, tomatoes,par-cooked small potatoes ( opt)
Wooden Skewers ( soak in water for 10 minutes)

MARINADE
3/4 cup vegetable oil.
2 T. white vinegar
1 tsp. onion powder
2 T. honey
1.5 tsp. gr. ginger
1 tsp. garlic powder
1/2 cup soy sauce

Directions:

Mix marinade ingredients and place in zip-lock bag.

Slice the flank steak (cutting in same direction as grain) into 1 inch long strips. Add meat to the marinade and marinate 8 hours or up to 24 hours.
(For camping, you can freeze flank steak pieces in zip lock bag. Make marinade in sealable container and pack in cooler. Let flank steak unthaw and add marinade to bag for 8 hours.)

Preheat Grill to medium high heat. Thread meat on soaked wooden skewers in an "S" shaped pattern alternately with peppers and zucchini until skewers are filled.
Grill over medium high heat, turning to brown all sides. Cook about 20 minutes until meat is fully cooked.

Any other flavored marinades are great too!! We especially like a Greek marinade or Ralphs bar-b-a sauce marinated and basted on meat.
Or rub meat with mix of 2 tsp. each of rst. garlic powder, paprika and pepper and 1/2 tsp salt. Grill as above and serve with
HERB BUTTER
In a bowl soften 2 sticks of butter, adding 1/4 cup chp. chives, 2 T. chopped thyme ( or other herbs) and 1/2 tsp salt. Mix well and refrigerate in bowl. Bring to room temp before serving on hot steak along with grilled baby potatoes and mushrooms.
