4 cups left over roast beef pieces (a little fat is okay)
4 cups peeled raw potatoes
2-3 cups onion.
Salt and pepper to taste
Crisco for frying.

Directions:
Grind the roast beef, potatoes and onions with hand grinder. Add to a bowl and mix gently.
In large deep skillet melt 1/3 cup Crisco until very hot.
Add the roast beef mixture to the hot fat and fry until brown, turning and browning until the potatoes and onions are cooked through and mixture is a deep brown color. (Add more Crisco as needed to keep from sticking.) Season with salt and pepper.

This is an old Carpenter favorite and as is typical -there was no real recipe! Basically it uses the roast beef leftovers to stretch for another meal. Use more or less of any of the 3 ingredients to suit what you have. Its not low calorie as it uses a lot of Crisco- though Mom and Dad used lard if they had it. Butter and oil don't work as it doesn't crisp up the same.

No food processors back then, and I've found that it does not work as well as the old grinder; it gets too finely ground.
