1.5 # top round or sirloin steak- 1/2 inch thick.
1 T. water
1 egg
1 cup finely crushed soda crackers( about 28 squares)
1/4 tsp. pepper
1/4 cup vegetable oil

MILK GRAVY
1/4 cup drippings from steak pan (if not enough drippings, add oil or butter to make 1/4 cup)
1/4 cup flour
1/2 tsp. salt
2 cup milk

Cut beef into 6 serving pieces. Pound each piece until 1/4 inch to tenderize. Beat water and egg in shallow dish.
In another shallow dish add crushed crackers and pepper. Dip beef pieces into egg mixture, then coat with cracker crumbs.
Meanwhile, heat oil in 12 inch skillet over medium high heat until hot. Fry beef steaks in oi - turning only once - until browned, 6-7 minutes. Remove and keep warm in low oven.

Prepare Milk Gravy by reheating oil in fry pan, adding oil or butter to make at least 1/4 cup. Scatter flour into hot drippings along with salt and whisk over low heat until flour is smooth and cooked in and browned bits are loosened. Slowly pour in milk, whisking constantly. Continue to whisk and heat to boiling. Boil 1 minute until desired thickness.
Serve hot over steak.
Serve with Mashed potatoes or biscuits
