1# lean ground beef
1/4 cup diced onion
1/2 large red pepper,diced
3T. taco seasoning
1 cup diced tomato
12 ounces cauliflower rice ( fresh or frozen)
1/2 cup chicken broth
1.5# cheddar or Mexican blend cheese, shredded

Directions:
Directions:
Brown beef in a skillet until pink. Drain if necessary. Add onions and peppers. Cook until beef is cooked and veggies softened. Add taco seasoning, tomatoes and cauliflower rice. Stir in broth and stir until just simmering. Turn heat to med-low and cook until rice is soft- 8-10 minutes. Turn heat to low and add cheese to the top. Cover skillet to melt cheese.( 3-4 minutes)
Serve with more cheese, diced tomatoes and lettuce and warm low carb tortillas.
