2-3 # beef round or chuck steak or good stew beef- cut in 1/4 inch cubes.
3 large onions, chopped
1-3 cloves minced garlic
1/4 cup chili powder- or more if wanted
1 heaping tsp. dried oregano - Mexican is best
1/2 tsp. paprika
1 tsp. cumin
1 tsp. salt
1 cup fresh chopped tomato ( or tomato sauce, puree, or drained canned tomato)
6 ounces beer
Cayenne pepper to taste
Cumin seeds if desired
1/4 # goat cheese, cut up

Veg oil for frying meat

Directions:
In large heavy kettle, heat thin layer of oil and brown the cubed meat, stirring often.
Add onions and garlic, cooking briefly.
Add spices, tomato product, and beer. Bring to boil.
Reduce heat to low - cover and cook for at least 1 hour or until meat is tender
Add cayenne to taste, and cumin seed if desired . Stir in goat cheese and stir until melted and bubbling gently.

Great over rice or on warm tortillas or eat like chili with cornbread or crackers.
Double or triple for a crowd.
