VARIOUS HINTS WHEN COOKING VEGETABLES:

HINT #1: When cooking canned vegetables, let the freshly opened can sit for 15 minutes before heating. This allows the vegetables to regain oxygen lost by canning and makes an amazing difference in flavor.

HINT #2: Vegetables that grow underground (ie: carrots, potatoes), should be covered when cooked. Vegetables that grow above-ground (greens, beans, corn) should be cooked uncovered.

HINT #3: Boil then Bake Potatoes. If potatoes are boiled for about 5 minutes, then put into a hot oven to bake, they will be thoroughly done in about half the usual time.
