½ c.margarine
1 box Stovetop Stuffing
6-8 zucchini-cubed
1 c. carrot-grated
¼ c. chopped onion
1 c. grated cheddar cheese
1 c. sour cream
1 can cream of mushroom soup

Directions:
Directions:
Melt the margarine and mix with the Stove Top. Reserve one cup for topping, Spread the rest on the bottom of a casserole dish.

Blanch zucchini for 2 min then drain. Mix with all of the other ingredients and spread over the stuffing. Top with the reserved stuffing.

Bake for 45 minutes at 350ºF. Tastes better the next day.
