1 lb cold leftover cooked fish
1 lb cold leftover mashed potatoes
1 T chopped parsley
1 egg, beaten
4 T breadcrumbs
salt & pepper

Directions:
Directions:
Remove any skin, bone on fish and then flake the fish. Mix with mashed potatoes, parsley, salt and pepper. Shape into flat round cakes. Dip each fish cake into beaten eggs then into breadcrumbs. Fry in hot oil until golden brown.
