Eggplant Parmesan Recipe

1 medium size eggplant, peeled and sliced into 1/4-1/2 in. rounds.
2 eggs, slightly beaten
1-1/2 cups Italian style bread crumbs
2 jars of marinara sauce
1/2 cup grated Parmesan cheese
10 slices mozzarella cheese

In a small shallow pan or bowl, beat the eggs with a Tablespoon of water. In a separate small shallow bowl, pour the bread crumbs. Take the eggplant slices and dip them in the egg, then coat them in the bread crumbs. Place the breaded eggplant slices on a baking sheet that has been brushed or sprayed with olive oil. Continue breading the slices. There should be enough slices for two baking sheets.Bake the breaded slices in a 350º for 25 minutes.

Evenly spread 1 cup of sauce in bottom of 9 x 13 baking dish. Layer 1/2 the eggplant slices, top with another cup of sauce and 1/2 the Parmesan cheese. Repeat process adding another layer. Cover with aluminum foil and bake 45 minutes.

Remove foil and cover the top of eggplant with the mozzarella slices. Bake uncovered until cheese melts, about 10 minutes.
