Whole Roasted Chicken Recipe

3-4½ lb. - whole chicken
1 each - lemon
1 each - head of garlic
2 tsp. - fresh thyme
¼ cup - butter, melted
salt & pepper

Preheat the oven to 425º F.

Cut lemon and head of garlic in half, set aside. Pat the chicken dry with paper towels. Using a sharp knife, slice through the loose areas of skin connecting the leg areas and breasts. Season all over, including inside, with salt and pepper. Place chicken, breast side up, in a large cast iron pan. Arrange the lemon and garlic, cut side down, along side the chicken. In a small bowl, melt the butter and stir in thyme. Pour over the top of the chicken.

Roast until chicken is nicely browned and cooked through, checking for doneness after 45 minutes. If juices at thighs do not run clear, continue to roast, checking every 5 minutes until juices are clear or the internal temperature reaches 165º F.

Let rest for 15 minutes in skillet before carving.
