1 side fresh salmon , boned but skin on (about 3 lbs)
2 T. Dijon mustard
3 T. Soy sauce
6 T. Olive oil
1/2 tsp. Minced garlic

Directions:
Cut salmon into 4 equal pieces. Whisk together remaining ingredients. Drizzle half of the marinade onto the salmon and let sit for 10 minutes. Place the salmon skin side down on a hot grill. I like to use a grill basket sprayed with Pam. Discard the marinade the fish was sitting in. Grill for 4-5 minutes then turn over and grill another 4-5 minutes. The salmon will be slightly raw in the center, but don’t worry; it will keep cooking as it sits. Transfer the fish to a plate, skin side down and spoon the reserved marinade on top. Allow the fish to rest 10 minutes. Serve warm, at room temperature, or chilled.
