2 TBL butter
1 large yellow onion chopped
1 14 oz can diced tomatoes
1/4 cup vodka
1/2 pint of heavy cream
2 cloves minced or chopped garlic
1 scant TSP red pepper flakes
Basil, parsley, salt and pepper to taste

Directions:
Directions:
In a large frying pan, saute onions in butter until translucent. Add red pepper flakes ( you can add or subtract depending on your taste) and garlic. Use a wooden spoon to stir in the tomatoes, continue to saute until the tomatoes cook down. Add Basil, parsley, salt and pepper to taste.

Add the Vodka and boil for a few minutes (be careful, vodka may flame up)

Remove from heat and stir in as much heavy cream as desired, color should be a pinky, you do not always use all the heavy cream.

Serve over Penne

Optional: sausage on the side
