5 lbs. flour
18-20 eggs
5 cups of sugar
12 tsp of fresh baking powder
½ lbs. melted butter
Grated lemon rind from 2 large lemons (fine pieces)

Directions:
Directions:
Pre-Heat oven to 375ºF. Mix flour, sugar baking powder and lemon rind. Place mixture on table and form a well in the middle. Beat eggs until even. Mix eggs and butter until smooth. Put wet portion into the well of dry mixture and mix by hand until smooth.
Knead ingredients and then let stand for 15 minutes. Break dough into section and make into a 1-2” rope. Place rope section into greased pie dish, connecting ends and place a small greased Pyrex ramekin in the middle. Brush egg wash (1 egg + ½ cup water) on to top of cake Bake at 375ºF for 15-20 minutes. Remove from oven when firm and tooth pick comes out clean. Allow to cool and then remove bowl. When cool, wrap in tin foil for storage.

Let cakes cool before taking the Pyrex ramekin out, otherwise it will crack. This coffe cake is meant to be dunked in coffee.
