4 c. of powdered sugar, sifted
2 T. meringue powder
5 T. water

Combine ingredients and mix on low speed until the sheen has disappeared and the icing has a matte appearance (about 7-10) minutes. Transfer icing to an air-tight container. Combine a portion of the icing with food coloring and water and hand stir until you have a consistency appropriate for piping. Using a pastry bag or squeeze bottle, pipe and flood the cookies. If icing gets to thin, add more powdered sugar to your mix.
