10 medium red potatoes
3 cans of chicken broth
½ c. very finely chopped onion
¼ c. butter
8 oz. pkg. of cream cheese
1 c. sour cream
1 egg
salt and pepper to taste

Directions:
Directions:
Boil potatoes in a mixture of chicken broth and water. Cook until tender (about 30 mins). Drain. Beat potatoes with electric mixer until smooth; add onions, cream cheese, sour cream and beaten egg. If mixture is too stiff, add milk. Place in a 2 quart casserole. Sprinkle with paprika, if desired. Bake at 350º for 45 minutes. This recipe may be made the day before and refrigerated overnight. Warm to room temperature before baking.
