1 English Muffin
1 tsp butter
About half a small onion, chopped
Handful of fresh spinach
1 small tomato
Goat cheese (chevre)
2 Eggs, poached (see recipe below)

Toast the English Muffin, set aside and keep warm.

Sauté the onions in butter, when they're almost done, add spinach and cook until wilted. Remove from heat.

When muffin is toasted, spread the goat cheese on the muffin, followed by the slice of tomato, followed by the spinach and onions. Press down gently to create a flat surface on top of muffin.

Place poached egg on top of muffin.

Enjoy!
 

Poached Eggs

Directions:
To poach eggs, bring water with splash of white vinegar to a simmer in a saucepan. Reduce heat to medium. Place egg, while still in shell, into water for about ten seconds, and remove (helps the egg keep its shape during the next bit). Crack the egg into a small bowl, and carefully pour it into the simmering water. Let the egg sit in the water for about three minutes, then remove with a slotted spoon. You can rinse the cooked egg to remove the vinegar by using the slotted spoon to dunk the egg in a bowl of warm water, then gently pat the egg dry by holding a clean towel against the bottom of the spoon (the towel will water will wick the water from the egg).

This is a recipe I got from an America's Test Kitchen book because Kelly loves goat cheese and poached eggs. I did not know how to poach eggs going into this, but I've since gotten quite good at it through a mix of online videos, Julia Child, and practice. You might not get it right away, but I recommend giving it a go because poached eggs are pretty great.
