Soften 1 envelope unflavored gelatin (1 Tbsp) in ¼ Cup cold water.
Stir in:
- 1 Cup boiling water
- ¾ Cup Sugar
- 1 Tbsp grated lemon rind
- ¼ Cup lemon juice

Directions:
Directions:
1. Cool lemon gelatin mixture, stirring frequently. When it begins to set (it takes a while), beat with a hand mixer until frothy
2. Beat 2 egg whites* until stiff, then beat egg whites into gelatin mixture. Continue beating until mixture holds shape (this takes a while too). Put into greased jello mold mold and chill


Sauce (optional)
1 Cups milk
2 egg yolks
½ Cup sugar
½ Tbsp cornstarch
Bring ingredients to boil and add 1 tsp vanilla


*if using pasteurized egg whites, add 1/2 tsp tarter when whipping them
