2/3 cup chopped onion
3 TB bacon fat
1 cup raw converted white rice
1 cup chopped green pepper
1 tsp chili powder
1 (8 oz.) can whole tomatoes
2 tsp salt
chopped fresh tomato & chopped green pepper, optional

Directions:
Directions:
In a medium heavy skillet with tight fitting lid, saute onions in bacon grease.

Stir in rice, green peppers, chili powder, tomatoes & salt

Add 2 cups of water Bring to a boil then reduce heat & simmer, covered for 20 minutes or until liquid is absorbed & rice is cooked.

Garnish with tomato & peppers
