2 Large Chicken Breasts, skinless, boneless, about 12 oz each, sliced in half
horizontally and pounded thin between pieces of plastic wrap. (You will have
4 pieces about 1/4" thick)
2 T Extra Virgin Olive Oil
1 T Fresh chopped Oregano
Kosher Salt and Crushed pepper to taste
1/2 C Tomato or Pizza Sauce
8 oz. Fresh Mozzarella, thinly sliced - about 2-3 pieces per chicken piece
2 to 3 Roma Tomatoes - sliced
8-12 Fresh Basil Leaves
1 T Red Pepper Flakes

1. Season sliced, pounded chicken pieces with salt, pepper and oregan and olive oil.

2. Prepare the grill and cook the chicken cutlets for about 3 minutes - flip and grill another 3 - 4 minutes.

3. Top the chicken cutlets with tomato sauce, red pepper flakes, mozzarella and tomato slices, close lid and cook until cheese is melted and chicken is cooked through.

4. Add basil leaves and serve.
