Cake Batter
4 eggs
2 cups of sugar
1/14 cups oil
1/2 teaspoon vanilla
2 cups All-Purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
3 teaspoons cinnamon
3 cups grated carrots
1 cup chopped walnuts
1 cup crushed pineapple with juice
1 cup coconut (shredded)

Frosting
1 8 oz package cream cheese
1/2 cup melted butter
1 teaspoon vanilla
2 3/4 cups sifted powdered sugar
Dash of Salt

Directions:
Directions:
Preheat oven 325º. Beat eggs; add sugar and oil. Sift together dry ingredients; add to egg mixture. Beat for 2 minutes. Add carrots, vanilla and walnuts, mix well. Turn into 13 x 9 non-greased pan. Bake for 45 to 50 minutes.

Frosting
Mix cream cheese, butter, vanilla and salt. Add powdered sugar mix well until smooth. Spread over cooled cake. Refrigerate.
