Ingredients: cooking spray 1 tsp olive oil 1/2 small finely chopped onion 2 medium coarsely shredded carrots (uncooked) 5 oz package fresh baby spinach 1 medium zucchini coarsely shredded (uncooked) 3 medium garlic cloves minced. 2 tsp fresh minced rosemary or you can use 1/2 dry rosemary 1 large egg 2 tbsp dijon mustard 2 tbsp Worcestershire sauce 1/2 tsp salt 1/4 tsp pepper 1 pound of uncooked turkey ground breast 1 cup uncooked old fashion oats or quick oats (oatmeal) 1/2 cup shredded mozzarella cheese

Directions:Preheat oven to 375º Spray loaf pan ( 10 1/2x5 1/2) with the spray oil. Next- Heat oil in a large skillet over medium heat. Add the onion and cook till onion begins to soften stirring often do not brown about 3 min. Add the carrots-spinach- zucchini-garlic and rosemary. Cook and stir occasionally until vegetables are semi soft about another 3 min. Drain and transfer to a shallow mixing bowl. cool the vegetable mixture slightly.
Next whisk together the egg-mustard-Worcestershire sauce-salt and pepper in large bowl. Add the ground turkey-oats and the cooked vegetables mix well but do not over mix.
Next shape the meat mixture into a loaf form and place into the oiled loaf pan. Bake for about 50 min. If you use a thermometer it should read about 165º. Next take out of oven and sprinkle the top with the mozzarella cheese let stand for about 5 min before serving. |
