2 lbs. haddock
1 small onion, diced
1 - 2 lbs. mushrooms, sliced
1 Tbsp. Italian fresh parsley, chopped
1 clove garlic, minced
⅛ tsp. pepper
1 tsp. salt
½ cup milk
1 lemon, juiced
¼ cup parmesan cheese

Directions:
Directions:
In a saucepan, sauté onion, mushrooms, parsley, garlic in a small amount of oil over low heat for 15 minutes. Stir in salt, pepper, then milk. Place fish in a greased baking dish. Sprinkle with lemon juice. Pour the vegetable mixture on top of fish and sprinkle the parmesan cheese over the top.
Bake at 350º for 40 minutes.
