3 pounds of cut up chicken, remove skin
1 tsp dried basil
1 yellow onion, thinly sliced
2 Tbsp butter
1 cup raspberry preserves
1/2 cup water
Cavender's seasoning to taste
( if you do not have Cavender's seasoning, season with what you like )
Hot cooked rice

Directions:

Preheat oven to 375*
Spray baking dish with non stick spray.
Place chicken in baking dish.
Sprinkle with basil, top with sliced onions, dot with butter, sprinkle with seasoning.
Cover and bake for 20 minutes.
Drain pan juices, reserving 1/2 cup. If not 1/2 cup finish to 1/2 cup with water.
Mix juices and preserves in bowl.
Spoon over chicken and coninue baking 20 minutes, basting occasionally.
