6 oz mushrooms (chopped fine)
3 eggs
6 Tbsp Butter
2½ oz flour
½ pint of Milk
Salt
Pepper

Directions:
Directions:
1. Preheat Oven to 350º
2. Seperate egg yolks and egg whites
3. Beat egg whites until peaks are stiff
4. Brown chopped mushrooms in butter
5. Stir in flour and salt & Pepper
6. Gradually add the milk, stirring constantly until thickened
7. Gently fold in egg whites
8. Pour into greased deep baking dish
9. Bake 30 minutes at 350º
