Ingredients:  
Beat 3 egg yolks (save the whites for Meringue if you would like) and 1 cup sugar
Mix 2 tbsp. tapioca with ½ cup sugar and 3 cups rhubarb ( Be sure to wash and let stand and drain)
May add a little cinnamon or orange zest
Combine and place in unbaked pie shell. Cover with a crumb mixture or another crust with slits. If you prefer add Meringue when done, Be sure to use dots of butter before adding crust on top.
Bake 10 minutes at 400 and then 35 - 45 minutes at 350.

Meringue: Beat egg whites, ½ cup sugar, and ¼ tsp.cream of tarter until stiff. May add a drop of almond flavoring. Spread on baked pie. Bake at 350 until lightly brown. Watch closely.
