1 pkg (1⅓ lbs Kirkland Signature organic ground beef
1 cup fresh breadcrumbs
¼ cup milk
1 egg
2 tbsp finely chopped shallots
1-2 garlic cloves, minced
salt and pepper to taste
2 tsp dried oregano
2 tbsp canola oil

Pastry
2 pkgs (4 sheets) frozen puffed pastry, thawed
4 tbsp Dijon mustard
6 slices Swiss cheese, quartered

Directions:
Prepare meatballs: combine all ingredients except canola oil. Form into 24 equal size balls. Heat oil in large saucepan over medium heat.Saute meatballs until cooked throughout, about 7 minutes, turning during cooking. Remove from pan to cool.

Prepare pastry: Place 1 puff pastry on a baking sheet. Spread 2 tbsp mustard on pastry, then evenly space 12 meatballs on top. Top each meatball with a piece of cheese. Place a 2nd sheet of puff pastry on top of the meatballs. Press down between each meatball. Cut a square around each. Crimp all edges. Repeat process with remaining puff pastry to make 24 total.

Bake according to puff pastry instructions.
