Ingredients: ½ large avocado ½ cucumber 3 T lemon juice and zest 2 cups of organic baby spinach, lightly steamed ½ cup coconut cream or milk 1 T MCT oil 1 scoop grass fed vanilla collagen protein (like Bulletproof) 1 scoop grass fed whey protein ½ tsp vanilla powder or extract 1 cup of ice 1 T chopped fresh ginger xylitol or stevia to taste (I used one dropper of liquid stevia)

Directions:1. Add all ingredients to a high-powered blender and blitz until evenly combined, smooth and creamy. 2. Depending how thick you like your smoothie, you can add extra water and re-blend. 3. Taste and adjust flavors as needed 4. Pour into glasses and serve.
Optional toppings: Fresh organic berries Nut butter shredded coconut (no added sugar) |

Notes: This is an easy smoothie to prep ahead of time. I just put all the ingredients into single size freezer safe containers and freeze. Then I will bring to work and blend everything when ready for lunch. Sometimes I had extra water for better consistency. Super refreshing, nutritious lunch.
