2 1/2 cups flour
1 tsp baking powder
1 tsp. salt
1/2 cup butter room temperature
2 cups sugar
2 eggs
1 15 oz. container ricotta cheese
Zest of 1 lemon
3 Tbsp. freshly squeezed lemon juice

Glaze;
1 1/2 cups icing sugar
Zest of 1 lemon
3 Tbsp. freshly squeezed lemon juice

Directions:
Directions:
In a medium bowl, combine flour, baking powder and salt. Set aside.
In a large bowl , beat butter and sugar until light and fluffy, about 3 minutes. Add eggs, add ricotta cheese, lemon zest, and lemon juice, beat to combine, stir in the dry ingredients.
Line 2 baking sheets with parchment paper. Spoon the dough by heaping teaspoon for each cookie.
Bake 375º for 15 minutes until slightly golden at edges. Remove from oven and let rest on baking sheet for 20 minutes.

While the cool combine icing sugar, lemon zest and lemon juice in a small bowl and stir until smooth. Spoon about 1/2 teaspoon of the glaze onto each cookie and use the back of the spoon to spread to the edges. Let the glaze harden for about 2 hours. Pack in an airtight container.
