Roasted Beet Crostini Recipe

1 Tbsp olive oil
salt and pepper
1 cup balsamic vinegar
1/4 cup honey
4 - 6 oz spreadable goat cheese
1 French baguette, sliced
Optional:
small basil leaves, pomegranate seeds, parmesan cheese

Directions:
Directions:
Place cubed beets in a medium bowl and toss with oil, salt and pepper..
Line a cookie sheet with parchment paper and lay out beets in an single layer.
Cook for 30 minutes or until fork tender
Set aside and allow to cool.
While the beet are cooking stir balsamic and honey together in a small saucepan and place over high heat.
Bring to boil, reduce heat to low and simmer until reduced it to 1/3 cup (about 10 minutes).
Brush the baguette slices with olive oil and toast in oven for a few minutes to warm..(Can use butter instead of olive oil).
Spread the goat cheese on sliced baguettes.
Add roasted beets on goat cheese.
Drizzle each crostini with balsamic reduction.
Top with optional toppings if desired.
Serve

Personal Notes:
The beets and balsamic reduction can both be prepped ahead of time. The beets can be served chilled or warm, they are delicious either way. If you need to assemble everything ahead of time, bake the crostini to more of a toast and add balsamic and basil just before serving.
