1 T olive oil
1 pound ground grass-fed beef (or ground bison)
16 ounces of mushrooms (any will do, I like baby bellas)
1 medium yellow onion, chopped (1 cup)
1 cup finely chopped celery
3 garlic cloves, minced
½ cup tomato paste
1 T minced fresh oregano
2 T red wine vinegar
2 T Worcestershire sauce
1 T molasses
¼ tsp sea salt
½ tsp freshly ground pepper
½ tsp hot sauce (optional)
4 Kaiser rolls or gluten free hamburger buns, toasted

1. Heat a large nonstick skillet over medium-high heat. Add oil, swirl to coat. Add beef, cook for 4 minutes or until browned, stirring to crumble
2. While beef cooks, place mushrooms in a food processor; pulse until finely chopped. Add mushrooms, onion, celery and garlic to pan; cook for 3 minutes or until onion is tender. Add tomato paste and next 5 ingredients (through salt) to pan; cook 5 minutes or until mushrooms are tender and liquid evaporates. Stir in pepper and hot sauce.
3. Serve with buns.

My kids love sloppy joes and this is a healthier version. Pair this with salad and sweet potato fries. I don't eat much bread so I just eat the meat by itself which is delicious as well.
