¼ cup coconut oil, melted
¼ cup nut butter (such as almond or cashew)
2 T Organic Maple Syrup (or 1 T of liquid stevia)
4 pastured eggs
1 T pure vanilla extract
½ tsp apple cider vinegar
3 T coconut flour
½ tsp ground cinnamon
¼ tsp seal salt
1 tsp baking powder
1 T ground golden flax
1 T hemp hearts
3 T mini chocolate sunlife chips (optional)
Coconut oil for frying

Directions:
Directions:
1. In a large bowl, mix the coconut oil and nut butter until smooth. Mix in sweetener of choice.
2. Beat in the eggs one at a time until combined
3. Whisk in the vanilla extract and apple cider vinegar and set aside.
4. In a separate bowl, mix the flour, cinnamon, salt, baking powder, flax, hemp hearts and chocolate chips if using.
5. Place a nonstick or cast-iron pan on the stove and heat on medium-low. Brush on coconut oil.
6. Mix wet ingredients with the dry and drop by the spoonful into the hot pan.
7. Cook each pancake until bubbles then flip. Cook total 2-3 minutes per cake.

This has been my go to gluten free pancake recipe for years. Hope you enjoy. I also like to top mine with fresh fruit.
