Roasted Banana Bread Recipe

3 medium bananas (about 1½ cups)
⅔ cup coconut flour, sift if lumpy
½ cup arrowroot flour
1 tsp ground cinnamon
¼ tsp cardamom
¼ tsp nutmeg
1 tsp baking soda
1 tsp baking powder
½ tsp sea salt
⅓ cup coconut oil
4 pastured eggs, separated
2 tsp pure vanilla extract
¼ cup honey
1 tsp liquid stevia
¼ cup coconut milk
½ tsp cream of tartar

Optional mixins:
1/2 cup mini sunlife chocolate chips
1/2 cup chopped favorite nuts
1/2 cup chopped favorite dried fruit.

Directions:
Directions:
1. Preheat oven to 400 ºF and grease a 4X8-inch loaf pan.
2. Lay bananas on a baking tray (unpeeled) and roast for 15 minutes. Remove and cool to room temperature. Turn oven down to 350º F.
3. Sift dry ingredients into a large bowl. Set aside.
4. Peel the cooled bananas, and mash them in a separate large bowl. Add the coconut oil, egg yolks, vanilla extract, honey, stevia, and coconut milk and whish until blended. Set aside.
5. In a large metal bowl beat the egg whites until foamy. Add the cream of tartar and beat again until stiff peaks form.
6. Add the wet ingredients to the dry and mix completely. Fold in the egg whites with a spatula and pour into the greased loaf pan. Fold in the optional mix-ins. Bake for 45 to 55 minutes. Remove from oven and cool in pan for 20 minutes. Remove from pan and cool completely on baking rack.

Ok..so over the years I have made a lot of paleo banana bread's and this is by far my favorite one. Even my daughter's volleyball team love it.
