2 cups self-rising flour
3.4 cup sugar
¼ tsp salt
1 cup milk
2 large eggs
1 tsp vanilla extract
½ cup melted unsalted butter, slightly cooled
2 cups fresh blueberries

Directions:
Directions:
Preheat oven to 375º. Spray 12 standard cup muffin pan with non-stick cooking spray. You can use mini muffin pans the same way.

In a large bowl, combine flour, sugar and salt. In a separate bowl, whisk together the milk, eggs, vanilla and butter. Pour into the flour mix and mix until just combined, do not over mix. Fold blueberries into the batter and fill muffin pans.

Bake for 15 – 20 minutes or until slightly golden brown.
