4 egg yolks
4 egg whites
⅓ c sugar, plus 1 tbsp
1 pint whole milk
1 c heavy cream
3 oz bourbon
1 tsp nutmeg

Directions:
Directions:
1) In bowl of stand mixer, beat the egg yolks until they lighten in color.
2) Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved.
3) Add milk, cream, bourbon and nutmeg and stir to combine.
4) Place egg whites in bowl of stand mixer and beat to soft peaks. With mixer still running, gradually add 1 tbsp of sugar and beat until stiff peaks form.
5) Whisk egg whites into mixture. Chill and serve.

For cooked eggnog:
Follow steps 1 & 2. Set mixture aside.
In med saucepan, over med/high heat, combine milk, heavy cream and nutmeg and bring just to boil, stirring occasionally. Remove from heat and gradually temper hot mixture into egg and sugar mixture. Return everything to the pot and cook until mixture reaches 160 F. Remove from heat, stir in bourbon, chill mixture. .
Follow steps 4 & 5, when mixture is chilled
