2 c milk
10 T flour
dash salt
2 c confectioner sugar
1 c unsalted butter
1 t vanilla
1 t coconut extract

Directions:
Directions:
Cook flour, milk and salt in a saucepan on medium heat, stirring constantly with a whisk until it's bubbly and thickened. Cover with plastic wrap, pressing the wrap directly onto the mixture so a skin doesn't form, and cool in the fridge.
Beat the butter and confectioner sugar until blended and light, add in the cooled flour & milk mixture. Beat until the consistency of whipped cream. Add in the extracts and beat until they're thoroughly incorporated.


This frosting is best made with a stand mixer. You can use a hand mixer but it takes a long time to get to the best consistency. You can use all vanilla extract if you prefer.

This is my mothers frosting recipe that she always made when I was growing up...I just made a couple of changes..adding the coconut extract to change the flavor, and using confectioner sugar instead of granulated.
