2 tbsp dark brown sugar
1½ teaspoon salt
1 teaspoon ground black pepper
½ tsp cumin
¼ tsp mustard powder
4 salmon fillets
1 tsp olive oil

Directions:
Directions:
Stir together sugar, salt, pepper, cumin and mustard in a small bowl.
Spread and push sugar mixture evenly into fleshy side of fish.
In a large non stick skillet heat olive oil and when hot place fish sugar side down.
Cook until rub dissolve and darkens but be careful not to burn.
